Vanillin is the first synthesis of human essence, by the German M Haarman and Dr. G, in 1874 the successful synthesis of tyman. Usually divided into methyl vanillin and ethyl vanillin. Methyl vanillin (vanillin), chemical name 3- methoxy -4- hydroxy benzaldehyde, the appearance of white or yellowish crystal, with vanilla aroma and rich milk flavor, is the largest varieties of perfume industry, is a major constituent of a universal favorite creamy vanilla flavor. Its use is very extensive, such as in food, cosmetics, tobacco industry as spices, flavoring agent or fixative, including drinks, candy, cakes, biscuits, bread and other food consumption are roasted. There are no reports that vanillin is harmful to humans. Ethyl vanillin is white to slightly yellow needle crystal or crystalline powder, similar to the aroma of vanilla beans, aroma is more concentrated than methyl vanillin.
